Bhugi Bhaji Recipe

Bhugi (small town near Balochistan) bhaji is cooked using potatoes,baingan,peas with lots of onions.Find out how to prepare Bhugi Bhaji.

2 Potatoes (Cut into 4 pieces) 
1 Baingan or eggplant (chopped) 
1/2 Cup Peas 
2 Onions (finely chopped) 
2-3 Green Chillies (chopped) 
1 Piece Ginger (chopped) 
1/2 tsp Garam Masala 
1/2 tsp Red Chilly Powder 
1 tsp Coriander Powder 
Pinch of Asafoetida 
Salt to taste 
1/2 Cup water 
Chopped coriander leaves 

How to make bhugi bhaji:

  • Heat oil in a pan and add chopped onions.Fry tillthey are golden brown.
  • Add asafoetida and fry for another minute.
  • Add potatoes,peas,baingan and all the powdered spices.
  • Now add 1/2 cup water and mix well.Simmer till the vegetablesare done.
  • Garnish with chopped coriander.
  • Serve hot.
