Here is a Christmas fruit cake recipe without alcohol without soaking and without treacle. Yes no alcohol Christmas cake which is moist, tasty and delish.

Ingredients:

  • 1 1/2 cup All Purpose Flour (Maida)
  • 3/4 cup Butter
  • 1 cup Brown Sugar
  • Zest of one lemon and one orange
  • 3 Eggs
  • 3 tblsp Walnuts
  • 3 tblsp Almonds
  • 3 tblsp Pistachios
  • 5 -6 Dried Apricots
  • 6 – 7 tblsp Sultanas and Raisins
  • 100 gms Black Currants
  • 100 gms Dried cherries
  • 100 gms Dried Cranberries
  • 8 – 9 Dates
  • 5 – 6 Figs
  • 1 – 2 Dried Blueberries
  • 4 tblsp Tutti Fruity
  • 1 tsp Cinnamon powder
  • 1/2 tsp Nutmeg powder
  • 1/4 tsp Cardamom powder
  • 1/4 tsp Ginger powder
  • 1/4 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 1/2 cup Mixed Fruit Juice or Orange Juice
  • 2 tblsp Cocoa powder
  • 1 tsp Vanilla Essence
  • Ready to Use Plum Cake Fruit Mix

How to make Christmas cake without alcohol:

  • Clean and chop all the dry fruits. Soak all the dry fruits in mixed fruit juice or orange juice. Do not soak the nuts as they get soggy.
  • You can soak them overnight in the orange juice or apple juice which ever you are using. It is advisable to keep the soaked fruits in an air tight container in the fridge.
  • To bake the cake :
  • Roast the almonds and walnuts . Chop and keep aside.
  • In a bowl take butter at room temperature and add the brown sugar. Now beat them together with a beater till smooth and creamy.
  • Add 1 egg at a time and continue beating and repeating till all the eggs have been added. Now with a light hand mix well.
  • When all the eggs have been added, add the lemon and orange zest and all the spices. Mix well with a light hand and do not over mix.
  • Now add the cocoa powder to get that deep color.
  • In a separate bowl sieve together – all purpose flour, salt, baking powder and baking soda. Sieve it two times to make its light.
  • Slowly, batch by batch add this flour mixture to the beaten egg – butter mixture with a light hand.
  • Once the flour mixture is mixed well, add all the roasted nuts and presoaked dry fruits into the batter and mix well.
  • Grease the cake tin with butter or line it with a parchment paper.
  • Heat the oven to 150°C. The temperature is low as the cake needs a long slow bake. It is packed with sugars, fruits and alcohol and if the temperature is any higher the outside of the cake will burn and the inside will be undercooked.
  • Spoon the cake mixture into the prepared cake tin making sure there are no air pockets and smooth the surface with the back of a spoon.
  • Now bake the cake at the 150 C for about 1 hr 30 mins to 1 hr 45 mins. After 1.5 hrs, insert a skewer into center of the cake and if it comes out clean its done and should be removed from the oven. Else if there is sticky dough on the skewer or toothpick when you pull it out, it needs more cooking, check again every 10-15 mins or so. If the top is already looking crispy, reduce the temp to 140C.
  • When the cake is ready it should be nicely risen and should have a deep brown color all over.
  • Leave the cake to cool in the tin on a wire rack for an hour, then remove from the tin and leave to cool completely.
